Didn't think banana pudding could get better… then I made it an ice cream taco 🍌 Waffle shells dipped in banana white chocolate + vanilla wafers, stuffed with banana pudding ice cream, topped with banana, wafers & condensed milk. No taco holder? I steamed the cones and shaped them with foil.
Steps
Bring a little water to a simmer in a pot. Set a metal strainer on top so it sits above the water, add one waffle cone, cover with a lid, and steam until the cone is soft and bendy.
Gently unroll the cone along its seam. If it starts to crack, give it a few more seconds of steam.
Mix a few drops of banana oil into melted white chocolate. Coat the outside of the waffle, then press it right away into crushed vanilla wafers.
While it's still flexible, drape it over a taco holder and let it cool until crisp. No holder? Fold a sheet of foil back and forth into taco-shaped ridges.
Once the shell is crisp, brush a thin layer of the banana white chocolate inside and let it set. This keeps the ice cream from making the waffle soggy.
Let the banana pudding ice cream soften for a few minutes so it's easy to scoop and spread. Fill each shell generously, then freeze until firm.
Top with fresh banana slices and broken vanilla wafers.
Finish with a drizzle of sweetened condensed milk and dig in!
