This banana bread is one of my all-time favorites. The black sesame makes it rich and a little nutty, and the brown butter gives it this deep, toasty flavor I can’t get enough of. I bake a loaf on Sunday and pick at it all week (if it lasts that long).

Steps

  1. Preheat the oven to 350°F and line a loaf pan with parchment paper.

  2. Add ½ cup packed dark brown sugar to a large bowl and set it aside.

  3. Melt ½ cup (1 stick) butter in a skillet over medium heat, stirring as it melts. It’ll start to foam a bit. Keep stirring, and once you see light brown flecks forming at the bottom, watch it closely, because it goes fast from here. When the flecks turn golden, take the pan off the heat and keep stirring.

  4. Once the flecks are a deep brown, pour the butter over the brown sugar and whisk right away. Let it cool for 5 to 10 minutes.

  5. While that cools, mash about 1¾ cups of ripe bananas (3 to 4 bananas) in a separate bowl.

  6. Whisk 2 eggs and 1 tablespoon vanilla into the cooled butter mixture, then stir in the mashed bananas until everything is well combined.

  7. Add 1½ cups all-purpose flour, 1 teaspoon baking soda, and ½ teaspoon kosher salt. Fold with a spatula just until combined, then split the batter evenly between two bowls.

  8. Using the same skillet from the butter, toast the black sesame seeds for 2 to 3 minutes, until fragrant. Blitz them in a food processor until they look like sand, then stir them into one of the bowls of batter.

  9. Spread a thin layer of the plain banana batter (about ¼ of it) across the bottom of the pan, then add a layer of the sesame batter. Keep alternating until you’ve used it all, ending with plain banana batter on top.

  10. If you want a marbled look, drag a long skewer through the batter in a few swirls.

  11. Bake for 50 to 60 minutes, until the loaf is domed and deep golden brown.

  12. Let it cool before slicing.
