School’s back in full swing, and every mom needs a snack her kids will actually eat. These peanut butter oatmeal bars are made with simple ingredients like whole grain oats and healthy fats. Toss one in a lunchbox or pair it with a glass of milk for a quick breakfast.

Steps

  1. Preheat the oven to 350°F. Line an 8x8-inch baking dish with parchment paper, leaving some hanging over the sides so the bars are easy to lift out later.

  2. In a large bowl, mash the bananas until smooth.

  3. Add the eggs, peanut butter, honey, and vanilla, and stir until everything is well combined.

  4. Stir in the oats, baking powder, salt, and cinnamon. Fold in about ¾ of the chocolate chips.

  5. Spread the batter into the pan, pressing it into the corners and smoothing the top. Scatter the rest of the chocolate chips over it.

  6. Bake for 30 to 35 minutes. Let the pan cool on a wire rack, then lift the bars out and cut. Finish with a sprinkle of flaky sea salt.
