This toasted coconut banana bread is one my family asks for again and again. The coconut on top gets golden and crunchy in the oven while the inside stays soft. We eat it for breakfast, as a snack, and sometimes for dessert too. Give it a try!

Upside Down Toasted Coconut Banana Bread

It's an upside-down banana bread: you pour maple caramel into the bottom of the pan, lay sliced bananas on top, sprinkle on toasted coconut, and then spread the batter over everything. While it bakes, the bananas and caramel cook down together.
