Don't toss those spotty bananas. Turn them into Peanut Butter Banana Oatmeal Balls, our Chunky Monkey Oatmeal Bites. No oven, no fuss, just 10 minutes to a sweet, nutty snack that's perfect for lunchboxes, road trips or sneaking straight from the fridge.

Steps

  1. Mash the banana. In a large mixing bowl, mash the banana with a fork until it's smooth, with no big lumps left.

  2. Add the wet ingredients. Stir in the peanut butter, maple syrup or honey, and vanilla until everything is creamy and fully combined.

  3. Fold in the dry ingredients. Add the dry ingredients and stir until no dry spots remain. The mixture will be thick and a little sticky.

  4. Chill. Refrigerate the bowl for 10 to 15 minutes. This firms up the mixture so it's easier to roll.

  5. Roll. Scoop out about a tablespoon at a time and roll it into bite-sized balls between your palms. Slightly damp hands keep the mixture from sticking.

  6. Store. Keep the bites in an airtight container in the fridge, if there are any left to store.

Notes

  • The bites keep in the fridge for up to 5 days, or freeze them for up to 3 months. These times are typical for no-bake bites made with banana, but check them against your own batch.

  • If the mixture is too sticky to roll, add oats a tablespoon at a time. If it's too dry, add a little more peanut butter.
